LEHI - Carol Evon Ashton Oxborrow, age 85, died Tuesday, October 8, 2024 surrounded by her family. She was born March 14, 1939 at her grandmother Hansen's house in Lehi, to Carl Thomas and Eva Lenora Hansen Ashton. Married D. Gary Oxborrow September 2, 1954 in Lehi, UT. They were later sealed in 2006 in the Salt Lake Temple. Gary & Carol served a 2 year mission at the LDS cannery. Carol was known as a hard worker, working for Grant's Gas Station, Maverik, Ream's & several mink farms. Also, helped farmers haul corn, wheat & sugar beets. Owned & operated Carol's Country Kitchen Cafe. Carol & Gary had a great love for dancing, especially square dancing. Her hobbies included family, gardening, sewing, decorating and a deep devotion to Family History. Survivors; children, Earlene (David) Varney, Springville, UT; Arnie Oxborrow, Pleasant Grove, UT; Bret (Colette) Oxborrow, Georgetown, ID; Larie (Gary) Elliott, Idaho Falls, ID; Carla (Justin) Collings, Mesquite, NV; LaNet (Phillip) Beckstead, Evanston, WY, brothers, Dale (Deane) Ashton, Lehi, UT; Dennis (Connie) Ashton, Washington, UT, 19 grandchildren; 47 great grandchildren; 14 great-great grandchildren. Preceded in death by spouse, D. Gary Oxborrow; Ryan Oxborrow (grandson). Special thanks to daughter, Earlene Varney for her vigilant care to mother. Funeral services will held at the Lehi LDS Ward Chapel, 1149 N 300 W., Lehi, on Saturday, October 12, 2024 at 11:00 AM. Friends may call Friday evening from 6 to 8 pm and 1 hour prior to services at the Lehi LDS Church. Burial in the Lehi City Cemetery. Published by Goff Mortuary.
